Anyone have any good healthy recipes that taste good?

Hi, I'm new to AF and am trying to change my eating patterns. I have tried some of the recipes on this site and surprisingly my family has liked them. Does anyone have any other good recipes I can try?

This is a recipe I make ALL the time because it only takes about 10 minutes to make and I usually have all these ingredients on hand (for the most part lol) its yummy AND healthy!

Spicy Garlic Shrimp (spicy optional)
1 lb large, cooked, deveined shrimp
1 teaspoon olive oil
1 Tablespoon minced garlic
½ teaspoon crushed red pepper flakes (optional)
½ teaspoon paprika
½ cup chopped celery
1 can diced tomatoes
1 teaspoon lemon juice
Salt and pepper to taste
Parmesan cheese

Heat oil in a large nonstick skillet over medium-high heat. Add garlic and red pepper to pan; sauté 1 minute. Add shrimp, paprika, celery, tomatoes, and lemon juice. Simmer for 5 minutes. Add salt and pepper to taste

Serve over whole wheat pasta, rice, or eat alone with a side of veggies or a salad. A little bit of parmesan cheese sprinkled on top goes a long way too.

I don’t know specific nutrition information because I make it different every time depending on what ingredients I have in the house but I actually made this last night over whole wheat pasta. I usually get about 4 servings and according to AH diet tracker this is the nutritional info

Calories per serving: 435
Fat : 8.3g
Carbs : 56.5g
Protein : 37g

This recipe is very versatile. If you’re missing an ingredient (I never seem to have celery in the house) it’s still good without it. Shrimp is very versatile itself, a lot of times I just toss shrimp in a pan with garlic, salt and pepper and a bag of frozen veggies…dinner is done! I always stock up on the bags of shrimp they sell in the freezer aisle, they only take a few minutes to thaw out if you run them under cool water and it saves a TON of time if they’re already deveined.

Thank youHappy I will definitely try it. I have three kids and it is always hard to find the right thing that they will all eat. Shrimp is always a favorite of everyone.

Have your tried the recipes here on AH? I tried 2 so far that I have enjoyed. One of the is the mini shepherds pie. I used a lower fat burger to make it. The recipe makes 4 10-ounce servings but I couldn't find ramekins that size at Walmart (closest place for me to shop) so I bought 8 ounces ones. This made 5 servings. The recipe calls for frozen squash of the winter variety; I also couldn't find it when I was in Walmart so I bought fresh and cooked in the microwave. I froze them and used them during the week for lunch or dinner with a nice salad. Really tasty and a good comfort food. I also tried the broccoli with caramelized onions and pine nuts - Yum. I will definitely be making both of these dishes again.

Oh, and that Spicy Garlic Shrimp sounds great - absolutely gonna try that. Thanks for sharing!

So far I have tried the tuna casserole and the orzo with sun dried tomatoes. Both of them were delicious (even my kids enjoyed them).

I have 4 kids and face the same challenges that you do. I have a huge library of good healthy foods that my kids enjoy. Most of them are India cuisine. So if you really want to look up good healthy recipes, I would start with world dishes, that are as far from american as you can be. How many fat chinese have you seen? In india? Portion Control is also a huge factor.... You can eat healthy dishes all day long, but they are bad for you in excess too.

Hi Rebecca. I'm in the same boat, trying to eat healthier. I have a recipe I created a couple years ago that an easy one to make ahead and just heat up! It's my healthy answer to Stuffed Peppers. I don't have measurements, but it's an easy one to make.

For the filling I use 10 minute Brown Rice, Chopped up Chicken Breast or Pork Loin (raw) And any vegetables that are in season or strike your fancy! I almost always use red onion, squash, and asparagus. It's hearty and really fill syou up. And it's fun to try different versions from whatever is on hand! Sometimes we top with a little shredded cheese if we're feeling frisky Devil

It does take a long time to bake off, so I usually cook this either for a weekend meal or simultaneously while makiing another meal during the week.

I like to make this and I really don't have a recipe.

Take a boneless chicken breast and poke holes all through it.
cut up mushrooms, and onions
poke holes in a few grape tomatoes (however many you like)

In a small bowl mix olive oil, garlic, salt, and pepper
cover the chicken and veggies with mixture

bake in oven at 350 for 20 minutes
sprinkle mozzarella cheese on top
bake a few more minutes or until done.

Its super great to throw on a salad.

Garlicky Oven Fried Chicken
Ingredients:
1 1/2 pounds skinless chicken thighs, bone-in
1 1/2 pounds skinless chicken breasts, cut in half crosswise
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon garlic, smashed to a paste
1 1/2 cup panko bread crumbs
1 teaspoon paprika
3/4 teaspoon cayenne pepper
1/2 teaspoon salt
2 egg whites
1 teaspoon dijon mustard
1/2 cup low fat yogurt
olive oil cooking spray
baking sheet
Instructions:
Preheat oven to 375 degrees Fahrenheit.
Spray baking sheet with olive oil spray.
Rinse chicken pieces and pat to dry, and then rub them with 1/2 teaspoon salt, pepper
and garlic paste. Let sit for at least 15 minutes. (This step may be done ahead up to 6
hours or overnight.)
In a shallow dish, combine panko bread crumbs and spices. Set aside.
Combine egg whites, dijon and yogurt in a bowl, and toss chicken in to coat.
Coat chicken pieces in breadcrumb mixture and place the pieces on prepared baking
sheet.
Spray the pieces lightly with the cooking spray.
Bake the chicken for 35 to 45 minutes or until the juices run clear when pierced with a
paring knife. The thighs will take longer to cook.
This recipe makes 4 to 6 servings.

All of these recipes sound amazing. I will probably try them all. I have been reading some recipes on line and in books, but it is best to hear from people and see what they like because some of the recipes in the books just seem bland and disgusting.Happy

im keith.just joined AF and loving it in fort mill SC. here is a recipe
i invented that i have almost every day after my work out :
Romaine lettuce leaf.pile on canned tuna.then chopped onion,cilantro,chopped tomato,pour on a little Raspberry vinaigrette then roll up and eat ! yum ! i have added some Almonds for crunch, that's cool too.

Yesterday I made Lentil Balls. They are really good.

1 cup lentils, 1 cup grated carrots, celery about 2 ribs also grated, 2 T onion minced and garlic. I just put all of the vegetables in a food processor until coarse. Saute the vegetables in a tablespoon of olive oil stirring frequently. Add raw lentils and 1 16 oz can chicken broth. Season with salt, black pepper, red pepper flakes, oregano. Oh, I also added several tablespoons of ground chia seed. Cook until the lentils are tender, about 20-30 minutes. Drain the lentil/veggie mixture, press out as much liquid as you can. Mash the lentils into a paste and add about 1 cup of bread crumbs and 2 eggs. Mix well. Form into balls about the size of a 50 cent piece place on a greased or parchment lined cookie sheet. Bake at 350 for 20-30 minutes. My recipe made 35 lentil balls. Eat with a light yogurt dipping sauce or a spicy Thai sauce, or marinara. I calculated the total calories to be about 1400 that works out to be about 40 calories per ball. Tasty!
