In an effort to be healthier my fiancé and I are trying to incorporate a salad a day into our meals, the goal obviously being having healthier foods and fewer calories. It’s just a small part of our overall lifestyle change. She has a trainer who is awesome and with him she is participating in the San Antonio “Fit for Life Challenge” and I of course am along for the ride. I am the cook of the house and have been staying away from store bought dressings for a while making our own with Vinegar, oil and fresh herbs. Does anyone have a dressing recipe they’d recommend or for that matter even a salad idea? I know there is not much you can change up in a salad while trying to keep it cost effective but anything to keep it from being the same old thing would be good. Please share your Ideas on dressing and Salads so that I can experiment.
Here is the a link to a GREAT salad. It sounds kind of weird but i promise you it is delicious!!! This has a homemade salad dressing made with lemon juice, pepper and olive oil. I usually add garlic and sometimes substitute red wine vinegar for the lemon juice. Both are great

Hey Robert I love to use Braggs healthy organic vinaigrette dressing and the price is reasonable. For salads I like to do mixed greens with Quinoa.
@ Marty I am not familiar with Quinoa, What is that and can it be found at a regular gorcery store?
Quinoa has a light, fluffy texture when cooked, and its mild, slightly nutty flavor makes it an alternative to white rice or couscous. My family and I cook Quinoa in chicken or veggie broth with red peppers, onions and garlic...way good... You can find it at Costco (in a 55 gallon drum..LOL) Whole foods on E. Basse Rd there in San Antonio should have it.
Quinoa is also HIGH in protein! My kids love it and it has a fun texture. When you are eating salads out, they can have more fat than some main course entrees. SparkPeople had a fun article on it - top 10 worst salads. Eat your salads at home.
For a quick salad dressing when you don't have much time, just use balsamic vinegar and/or lemon juice and a little olive oil (good fat, worth the fat grams). Sprinkle on whatever "leafy" herbs you have on hand.
I love to make a big salad with romaine lettuce, grilled chicken, feta cheese, apple chunks, strawberries & homemade dressing. I buy the packets of good seasons salad dressing mix. I usually use apple cider vinegar and safflower oil....but I use a little more vinegar and less oil than the directions call for. This salad is a knockout and I have found that if I eat it every day for lunch, I can usually drop a couple of pounds within a week or two.
Does anyone consider Newman's Own Oil and Vinegar dressing to be good for you? I know, it's oil but it's olive oil and I don't use a lot of it.
Newmans is a great brand and as a company they have a solid mission. The Oil and Vinegar dressing they make is wonderful and good for you. The olive oil they use is extra virgin and its cold pressed that is BIG try to avoid olive oil that is not extra virgin or cold pressed.
I like Miso salad dressing from Whole Foods or just extra virgin cold pressed olive oil!
If you add fresh cilantro to any salad it will taste so much better and/or fresh dill!
