Quesadillas are one of my favorite quick and easy lunch options. Warm, gooey, and full of flavor, they come together fast and satisfy the urge for comfort food. I think quesadillas have a bad reputation because of the heavy, greasy restaurant versions that can often have a calorie count worthy of a whole meal. We will make them healthy by using whole wheat tortillas, flavorful summer veggies, and going easy on the cheese. This will create a delicious, guilt-free summertime meal. And it won't cancel out all the hard work you did at the gym.
